For those who don't know me this is just a little introduction about me! Tim!
Growing up as a gamekeepers son I have always been interested in processing of wild game, from the age of 10 i had to earn my pocket money, Jobs like paunching and skinning rabbits for the local cattery on a weekly basis will always stick in my mind.
Even rearing my own turkeys and geese for Christmas to sell to friends and family, I was never phased by the whole process of slaughtering the birds and dressing them.
At the age of 15 I had found myself working in a local butchers, starting out as most do, by scrubbing the fridges and butchers blocks. I found a real passion in butchery and now 18 years down the line I'm still in the trade and now own the shop I started off at!
On conpletion of my apprentership I was entered into the competition 'Apprentice Butcher of the year' which I won! I was invited to London to the worshipful Butchers Hall where I was awarded a massive trophy and enjoyed a three course meal.
A few years passed and I felt I needed a new challenge where I went into catering butchery. I spend 6 years doing this but really missed the general public and the shop trade.
During this time I entered BBC 3 young butcher of the year! Going through interviews, semi final at Smithfield meat market to the final in Suffolk! I came third out of approx 3500 applicants, that being one of the highlights of my career so far!
I moved back to work In Herefordshire managing a few shops growing my knowledge.
I was then approached about fulfilling my dream, taking on my own shop, which was Cornwalls Family Butchers. The very shop I started at! So a full circle, I now find the passion that I had when I learnt the trade I am now putting my all into my own business. Training apprentices like I was once trained! We have a great team and definelty wouldn't be where we are today without all there hard work. I have even roped my mum in making all our delicious homemade pies, pastries and sausage rolls so it is a proper family business!
